Brown Sugar & Cinnamon Pancakes | Natural High Protein Recipe

Today we're making brown sugar & cinnamon protein pancakes! These pancakes have such an incredibly rich and nutty flavor from the toasted oats, and are packed with a ton of protein without needing to add any artificial ingredients or protein powder. They're light, fluffy, and are sure to fool any non-dieter into thinking this recipe is full fat and full sugar. INGREDIENT AMOUNTS: (MAKES 1 SERVING/3 LARGE)

2 Large   Eggs
2.5oz      Unsweetened Vanilla Greek Yogurt (75g)
1/2 Cup  Old-Fashioned Oats (40g)
2 tsp      Dark Brown Sugar (8g)
1 tsp       Baking Powder
1/2 tsp   Baking Soda
1/2 tsp   Cinnamon
1/2 tsp   Vanilla Extract
Pinch     Salt
 

INSTRUCTIONS:

Toast oats in dry pan for 3-4 minutes on medium heat or until golden brown and aromatic and blend into a fine flour. Combine All dry ingredients into a bowl and mix thoroughly. Whisk eggs in separate bowl and combine with all wet ingredients. Gently incorporate dry ingredients in with wet mixture until no dry flour is visible being careful not to over-mix. Pour mixture 1/3 at a time into a nonstick sprayed pan on medium-high flipping half way through when bubbles form on pancake batter. Repeat until all pancakes are finished, then serve and enjoy.
