Apple Cinnamon Oat Muffins | Flourless Muffin Recipe

Today we’re going to be making apple cinnamon oat muffins. I’ve always loved oat recipes even before losing weight, and these muffins are no exception. Super simple to make and really delicious, they are a great way to satisfy those sweet cravings without going overboard on your diet. These come out to just over 200 calories per muffin, and only took about 10 active minutes in the kitchen from start to finish. Being higher in fiber, these muffins are sure to fill you up well when you’re looking for a quick and healthy snack. INGREDIENT AMOUNTS: (MAKES 6 MUFFINS)

• Steel Cut/Old-Fashioned Oats (160g/2 Cups)
• Unsweetened Cashew/Nut Milk (1/3 Cup)
• Honey (22g/1 TBSP)
• Banana (120g/1 Medium)
• Apple (50g/ 1/2 Medium)
• Peanut Butter (96g/6 TBSP)
• Vanilla Extract (1/2 tsp)
• Cinnamon (1/2 tsp)
• Salt (1/4 tsp)
• Baking Powder (1 tsp)

 

INSTRUCTIONS:

In a bowl, combine the cashew milk, peanut butter, honey, vanilla extract, and banana. Blend or mash the ingredients until thoroughly combined. Dice your apple and combine into the bowl along with cinnamon and salt. Once combined, add oats and baking powder and divide mixture evenly into a muffin tin sprayed with nonstick spray. (Should make 6-7 in total.) Bake for 15 minutes at 375°F/190°C, then serve and enjoy!
