Today we’re going to be making BBQ Meatloaf! This recipe has instantly become another classic for me, it’s full of flavor, simple and easy to make, and most of all I’m just an old man who loves some good comfort food. At only 300 calories a serving, you’ll definitely have to give it a go for your next dinner or meal prep. INGREDIENT AMOUNTS: (MAKES 8 SERVINGS)
1 Pound 96/4 Lean Ground Chicken
1 Pound Ground Pork*
1/2 Cup Plain Bread Crumbs
1 Large Egg
1/2 Large Yellow Onion
1/2 Cup Canned Tomato Sauce
2 tsp Salt
1 tsp Black Pepper
1 tsp Smoked Paprika
1 tsp Garlic Powder
FOR GLAZE:
1.25 Cups Canned Tomato Sauce
3 TBSP Worcestershire Sauce
2 TBSP Apple Cider Vinegar
2 TBSP Honey
2 TBSP Yellow Mustard
* Substitute Pork with more ground chicken to save on calories
INSTRUCTIONS:
Break apart ground meat into smaller pieces and combine in a bowl with a beaten egg, finely chopped onion, tomato sauce, bread crumbs & spices. Spread mixture evenly into a loaf pan and preheat your oven to 350°F (176°C). In a separate bowl, add all ingredients for glaze and mix thoroughly. Pour 1/2 of the glaze mixture over the meatloaf and place in preheated oven for a total of 80 minutes or until internal temperature of 165°F (74°C) is reached.
Remove meatloaf from oven every 20-30 minutes or as needed to apply more of the glaze mixture, and turn oven to broil setting for the final 2-3 minutes to caramelize the exterior. Let rest in loaf pan, then serve and enjoy!
