Chipotle Chicken Burritos | Cast Iron Chicken Recipe

Today we’re going to be making chipotle chicken burritos! These burritos are super simple and incredibly delicious, and they can be made into bowls, lettuce wraps, or whatever style that fits best into your diet. The chicken has a ton of flavor and a really great texture from the cast iron pan. INGREDIENTS: (MAKES 8 BURRITOS)

1 Pound     Boneless Skinless Chicken Breast
1 Large      Red Bell Pepper
1/2 Med.    Yellow Onion
1 Can        Strained Black Beans
4 oz         Whole Kernel Sweet Corn
8 tbsp      Salsa
8 Small    Flour Tortillas
1 tbsp      Olive Oil

For Marinade:
1/2 Med.   Yellow Onion
1 tbsp        Olive Oil
1 tsp          Apple Cider Vinegar
4 Cloves   Fresh Garlic
1/2 tsp      Salt
1/2 tsp      Black Pepper
1/2 tsp      Cumin
1/2 tsp      Chinese 5 Spice
1/2 tsp      Oregano
1/2 tsp      Paprika
1/2 tsp      Chili Powder

 

INSTRUCTIONS:

Loosely chop the yellow onion and garlic cloves for the marinade and place them in a blender or food processor. Add in the apple cider vinegar, olive oil, and all spices and blend until mixture is fully pureed. Chop the chicken breast into small pieces and place in a bowl or gallon bag along with the marinade. Mix thoroughly and place let rest for 20-30 minutes.

Chop your remaining vegetables for the burritos and preheat your pan on medium high heat.
Once preheated, pour 1 tbsp of olive oil along with your chicken marinade mixture. Cook on medium high heat without stirring until all moisture is reduced and the chicken begins to sear and caramelize, then stir occasionally until the chicken reaches an internal temperature of 165°F (74°C). Set cooked chicken aside and cook vegetables in the already heated pan until your desired done-ness is reached. Warm your tortillas with the heat and steam from your pan to prepare for folding, then build your burrito and enjoy!
