Smoky Garlic Sweet Potatoes | Crispy Baked Potato Recipe

Today we're making smoky garlic sweet potatoes! After years of trying to make crispy fries and potatoes at home in my oven, I've finally figured out all of the steps needed to capture that elusive oven crispiness every time. The smoky and savory flavor from the garlic and paprika really compliments the sweet potato to make something greater than the sum of its parts. INGREDIENT AMOUNTS: (MAKES 2 SERVINGS)

1 Large    Sweet Potato (300g)
1/2 tbsp  Corn Starch (4g)
1/2 tsp    Smoked Paprika
1/2 tsp    Garlic Powder
1/2 tsp    Salt


INSTRUCTIONS:

Peel and cube sweet potato into ~1 inch cubes and soak in a bowl of cold water for 15-20 minutes. Strain sweet potatoes and dry completely. In a bowl or gallon bag, combine the cubed sweet potato with the corn starch, paprika, and garlic powder, mixing thoroughly to ensure an even coating. Bake at 425°F (218°C) on a nonstick-sprayed baking sheet for 30 minutes, turning half way through. Salt to taste and let cool on ventilated baking rack.
