Today we’re going to be making korean beef and quinoa bowls. These bowls are incredibly quick and easy to make, between the nuttiness from the quinoa and the spicy flavors from the beef, all the flavors combine into a really delicious and calorie-friendly meal. INGREDIENT AMOUNTS: (MAKES 4 SERVINGS)
1 Pound 93/7 Ground Beef (450g)
12oz Fresh Broccoli (340g)
1.5 Cups Quinoa (270g)
3 Cups Low Sodium Vegetable Stock (725g)
FOR SAUCE:
1/3 Cup Low Sodium Soy Sauce (75ml)
1/2 TBSP Sesame Oil (7g)
2 tsp Minced Garlic (15g)
2 tsp Powdered Stevia
1 tsp Cayenne Pepper
1/2 tsp Fresh Ginger
1/2 tsp Black Pepper
INSTRUCTIONS:
Add quinoa and vegetable stock into medium sauce pan and bring to a boil. Cook for 15 minutes or until all liquid is absorbed and fluff with fork when finished cooking. Whisk together all sauce ingredients in small mixing bowl and set aside. Cook ground beef on medium-high heat until fully browned and mix in sauce. Once the ground beef is fully coated in sauce, pour broccoli over top of the beef and cover the sauté pan with a lid to steam broccoli. Cook covered for 4-5 minutes on medium heat. Serve the beef and broccoli over the quinoa, serve and enjoy.
