Today we’re making honey sriracha turkey meatballs! These sweet and spicy meatballs are an adapted recipe from a recipe I found on eatyourselfskinny.com, they were so easy and delicious I had to share with all of you. I've always been a big fan of Sriracha and this recipe did not disappoint! The meatballs require pretty minimal prep and cook time and will reheat very well for your weekly meal prep. INGREDIENTS: (MAKES 10 MEATBALLS)
For Meatballs:
1 Pound 93/7 Ground Turkey (450g)
1/4 Cup Plain Bread Crumbs (30g)
1 Large Egg
1/2 Red Bell Pepper, Chopped (75g)
1/4 tsp Salt
1/4 tsp Black Pepper
1/2 tsp Garlic Powder
For Sauce:
2 tbsp Sriracha Sauce
2 tbsp Low Sodium Soy Sauce
2 tbsp Honey
1 tbsp Apple Cider Vinegar
1 tsp Fresh Grated Ginger
1 tsp Minced Garlic
1/4 tsp Sesame Oil
INSTRUCTIONS:
In a bowl, add all meatball ingredients and lightly stir or mix. Shape mixture into equal-sized balls and place on a nonstick baking sheet. Bake at 375°F (190°C) for 25 minutes or until meatballs reach an internal temperature of 165°F (74°C). While meatballs are cooking, combine sauce ingredients and reduce in a pan on medium high stirring occasionally until desired thickness is reached. Toss the cooked meatballs in the sauce and serve with rice or cabbage slaw. (Optional step - top meatballs with sesame seeds for garnish.)
