Today we're making home made falafel! These crispy chickpea patties are one of my all-time favorite foods. They're so easy to make and very low in calories, be sure to give this one a try!
INGREDIENTS: (MAKES 10 FALAFEL)
• Dried Garbanzo Beans (1 Cup)
• Fresh Chopped Parsley (1/2 Cup Loosely Packed)
• Chopped Sweet Onion (1/2 Medium Onion)
• All-Purpose Flour (1.5 TBSP)
• Baking Soda (1/4 TSP)
• Lemon Juice (2 TSP)
• Minced Garlic (6 Cloves)
• Peanut Oil (2 TBSP)
• Salt (1 TSP)
• Pepper (1 TSP)
• Coriander (1/2 TSP)
• Cumin (1 TSP)
• Paprika (1/2 TSP)
INSTRUCTIONS:
Soak the dried chickpeas in a bowl of water for 24 hours before beginning the recipe. In a food processor, add all ingredients minus the peanut oil. Pulse until dough-like consistency is reached, stopping to scrape the sides of the food processor in-between pulses. Preheat pan on medium-high and add peanut oil. Form the falafel mixture into patties (~55g each for 10 falafel) and cook for 5-6 minutes flipping half way through, or until falafel has a golden brown exterior. Let the falafel rest on a cooking rack during cooking process, then serve and enjoy.
