Scrambled Egg Sandwich | 5 Minute Low Calorie Breakfast

Today we’re making open-faced scrambled egg sandwiches! This recipe isn’t a pretty one, but for what it lacks in looks it more than makes up for in taste. Between the fluffy texture from the scrambled eggs and the nice complimentary flavors from the hummus and chives, this is sure to satisfy your breakfast cravings. This has been my go-to quick breakfast staple that I can’t help but keep coming back to. INGREDENT AMOUNTS: (MAKES 1 OPEN-
FACED SANDWICH)

3 Large Eggs
1 Slice Bread
1 oz Hummus
1/4 tbsp Olive Oil (Optional)
1/4 tsp Garlic Powder
1/4 tsp Oregano
1/4 tsp Salt
1/4 tsp. Black Pepper

DIRECTIONS:

Preheat nonstick pan to medium-low heat and whisk 3 eggs thoroughly. Once pan is preheated add olive oil followed by whisked egg mixture. Add spices and continuously fold eggs with rubber spatula until eggs begin to solidify, forming them into a bread-shaped patty. Flip egg patty after 2-3 minutes and let cooking finish on opposite side. Toast bread and apply hummus, followed by egg patty. Top with sriracha, chives, or whatever toppings you would enjoy.
