Garlic Fennel Asparagus | Easy Cast Iron Recipe

Today we're making garlic fennel asparagus! I've been obsessed with this garlic fennel combination for vegetables for a little while now, and this recipe is no exception. This asparagus came out so great and the more and more I use this garlic fennel combo the more I like it for practically any vegetable. This is a great low calorie side dish you can use for your weekly meal prep or a quick weeknight dinner. INGREDIENT AMOUNTS: (MAKES 3 SERVINGS)


1 Bunch       Asparagus Spears (1lb/450g Untrimmed)
1/2              Lemon (Juiced)
3 Cloves     Garlic
1 TBSP        Fennel Seeds
1 tsp           Black Pepper
1 tsp           Salt


INSTRUCTIONS:

Trim Asparagus spears at natural breaking point. Preheat cast iron pan to medium-high heat and add the spears along with the salt and pepper. Cook for 5-6 minutes stirring occasionally. Reduce heat to medium and add garlic, fennel seeds, & lemon juice. Cover the pan and cook for an additional 3-4 minutes then serve and enjoy.
